L-cysteine hydrochloride is a colorless to white crystalline or crystalline powder, with a slight special odor and sour taste, and a melting point of 175 °C (decomposition). Soluble in water, the aqueous solution is acidic, the pH value of the 1% solution is about 1.7, and the pH value of the 0.1% solution is about 2.4.

L-cysteine hydrochloride uses and precautions: flour treatment agent, nutritional supplement. As a nutritional supplement, it should not be added at a maximum of 2.3% of the total protein content (including L-cystine). China's "Hygienic Standard for the Use of Food Additives" (GB2760-2011) stipulates that it is used for fermented flour products, 0.06g/kg. The dosage of frozen rice flour products is 0.6g/kg (based on L-cysteine hydrochloride).
